There is an idea that came to my mind few days back, which says something like "you are what you eat" to stress the value of a healthy nutrition and avoid retardation to your body.

But then I thought why somebody didn't come to the idea of "you are (even more of) what you consume as an information (source)".

If you lack a healthy nutrition, then that causes a physical (bodily) deficiency to you, if you lack an adequate source of information, then you will suffer a mental deficiency, like the professor here. You have to take care of what information source you may subscribe to in the era of ubiquitous and undifferentiated sources of information of the internet era.
