The comparisons aren\u2019t precisely accurate, of course, but I find they\u2019re a helpful way to describe a cuisine that\u2019s relatively little known in these parts of the United States.<\/p>\n<p>Until now, though, I\u2019ve never compared an Ethiopian dish to a taco. That\u2019s just what\u00a0<a href=\"https:\/\/www.goorshadurham.com\/\" target=\"_blank\" rel=\"noopener\">Goorsha Restaurant\u2019s<\/a>\u00a0kitfo presentation calls to mind: injera cut into taco size rounds, folded around kitfo and spinach (the \u201clettuce\u201d), and topped with crumbles of Ethiopian fresh cheese (\u201cqueso fresco\u201d). They\u2019re even folded taco style, and served two to an order on a taco tray.<\/p>\n<p>The kitfo presentation is a fetching example of Goorsha\u2019s self-described \u201cmodern Ethiopian cuisine,\u201d but it\u2019s by no means the only one. Sambusas, savory pastries with a filling of lentils, onions, garlic and jalape\u00f1os wrapped in shatter-crisp phyllo, come with a pungent green sauce served in a sleek ceramic spoon of the sort used for tasting menus. Entrees are served on elegant rectangular platters.
